- 2 large eggs
- 1 1/4 cup ricotta
- 1 1/4 cup grated mozzarella
- 1/2 cup finely grated parmesan cheese
- 2 tablespoons fresh thyme (or 2 tsp dry)
- 1/2 teaspoon salt
Combine all ingredients and mix with the paddle of a stand mixer. You can also just mix with a large fork. Refrigerate for at least an hour or up to overnight.
